Breakfast is mandatory for me. I will never fully comprehend those people that roll out of bed 10 minutes before they have to leave the house, skip breakfast, and somehow survive on coffee alone (and still make it to work on time – what is this witchcraft!?). That sounds like a good recipe for a gurgle-y, sour stomach. Gross. And bad for digestion. Don’t be that person. Be good to your body.
The other morning I woke up to my alarm at 5:45am, and was unable to hit the snooze button. I was sleeping in the spare room with Bourdain, and he can’t sit still when he’s hungry. He can sometimes sleep through his hunger for a few extra minutes, but is promptly reminded of it upon jolting awake to my horrendous alarm. He will then become a tiny blur of a cat, bounding through the apartment, knocking everything over in his path. He’ll sometimes skid to a stop, whip around, and tear off in the other direction. When he starts, there’s no stopping him. So I gave in and got up 20 minutes earlier than intended. This allowed for time to add in extra veggies to breakfast for T and me. I enjoyed it so much that I made it for us again this last Sunday, when we were both nursing some pretty intense hangovers. Due to being hungover and distracted, the veggie to egg ratio was a little off, and the vegetables burned slightly. There are more veggies than eggs in the photographed version, and rather than remake it just to photograph (which is difficult due to living in Minneapolis and having a serious lack of natural light before and after work), I opted to share this version. I think you will all get the gist despite the less than perfect photos.
I have been making an effort to add in even more veggies to my already veggie-heavy diet. I routinely make breakfast sandwiches with mushrooms and spinach for work days, but thought I’d add in some extra veggies that are minutely more time consuming to cook. The broccoli takes an extra step, but this could be skipped, and just tossing into the skillet. I do that sometimes when I’m in a hurry, but the broccoli will be a little more crisp. It’s not a bad thing at all, but I prefer it to be a little softer when combined with eggs. The bell pepper also takes a couple of extra minutes, but I often get other things ready while it’s cooking (snacks for work, jewelry on, socks, etc) to save on time.
I truly believe everyone has time for a hot breakfast in the morning. So get your ass outta bed, and let’s do this.
Lazy Sunday Morning Breakfast – serves 2
4 eggs, whisked
1 green onion, diced (greens and whites)
1 small handful of broccoli florets
1/2 bell pepper, diced (choose red, yellow, or orange for extra color!)
3-5 mushrooms, sliced
1 handful spinach or Swiss Chard (or any other hardy green of choice)
Olive oil
Salt and pepper, or seasoning salt of choice
Optional: Salsa, hot sauce, sour cream
In a large skillet over medium-high heat, add a drizzle of olive oil + bell pepper. While the bell peppers start cooking, add about an inch of water to a medium sauce pan, and place on the stove over high heat. Bring to a boil and add the broccoli. While broccoli boils for 2-3 minutes, add the mushrooms to the skillet with the peppers. Move everything around a little bit to even out the cooking process. Drain the broccoli. Once the mushrooms start to brown, throw in the broccoli and onion. Add some salt and pepper. Allow to cook for a few minutes, until things have started to brown slightly. I like the broccoli florets to have a little darkening on the edges. Once everything looks good, season to taste, and add in the greens. Stir until wilted, then finally add in the whisked eggs. Reduce heat to medium. I like to allow my scrambled eggs to cook for a minute or two before seasoning and mixing around the pan (at least when there are more than 1-2 eggs). Keep mixing until fully cooked to your liking (I like mine soft). Pile onto a couple of plates, and serve with whatever toppings you’d like, plus maybe a slice or two of toast (sourdough for me) and/or some fried potatoes. Grab a sweet and milky cup of coffee, and nestle into the couch to dig in, preferably with no pants and a fuzzy blanket.
Or go to work, I guess.
